Information About Dish :

From the name of Ukadlele Paushtik Moog (Boiled Nutritious Mung Bean), it is easy for all of us to realise that this dish will be as nutritious as the name implies. Nowadays, people with extra work stress should eat boiled nutritious mung beans, a popular food in the Konkan region. Boiled nutritious mung beans is an instant dish and mung beans are very beneficial for the body and if the mung beans are sprouted, it is more beneficial for the body. Mung Beans are rich in nutrients. If a person with fever eats boiled mung beans, it helps in boosting the immune system and gives energy to the body. Eating mung beans are very helpful in controlling obesity and diabetes. Mung beans or dishes made from them are also beneficial for weight loss. Eating boiled mung beans helps to improve the body's digestion. Eating mung beans also strengthens bones, keeps blood levels under control and reduces various stomach ailments. If boiled mung beans are consumed during pregnancy, it also benefits the mother and the newborn baby and the growth of the baby in the mother's womb is also regulated. There are many benefits to eating boiled mung beans, so it is very important to include this nutrient in your diet, which is especially famous in Konkan region of Maharashtra. 

Speciality :

The main scpeciality of boiled nutritious mung beans is its nutritional value and taste. In the Konkan region, boiled mung beans are eaten with great relish, as they are very nutritious for body health. Apart from this, it is very easy to make and vegetables like onions and tomatoes are used in this dish. Also, adding spices and salt to this dish makes it more palatable. In the Konkan region, wet coconut is used in almost all foods, and the addition of finely spun wet coconut to boiled nutritious mung beans enhances the taste of the dish.

Ingredients :

1) Oil
2) Seven To Eight Curry Leaves
3) Two Finely Chopped Green Chillies
4) Asafoetida
5) Turmeric
6) Two Bowls Of Sprouted Mung Beans
7) One Finely Chopped Onion
8) Two Finely Chopped Tomatoes
9) Spice
10) Salt
11) Half A Bowl Of Finely Spun Wet Coconut
12) Cilantro

Procedure :

1) To make Ukadlele Paushtik Moog or boiled nutritious mung beans, first take a small cooker.
2) Turn on the gas and put this small cooker on it, by keeping the gas to a medium flame add four to five teaspoons of oil in the cooker.
3) Once the oil is well heated, add seven to eight curry leaves, two finely chopped green chillies, pinch of asafoetida and pinch of turmeric.
4) Fry all the bursting properly. After frying the curry leaves and green chillies in oil, it will waft a pleasant aroma of curry leaves, green chillies, asafoetida and turmeric.
5) Then add two bowls of mung beans in this bursting. To cook the mung beans, add one bowl of water and salt to taste and mix all these ingredients. So that the bursting in the oil and the salt will be right everywhere in the mung beans.
6) Then carefully close the lid of the cooker and take out one whistle of the cooker over medium heat. Because only in one whistle mung beans are cooked quickly in a cooker.
7) After one whistling of the cooker turn off the gas and after 5 to 7 minutes, lift the whistle of the cooker with the help of a spoon, remove the vapour from it and open the lid of the cooker carefully. Remove all the boiled mung beans in a large bowl. Then add one finely chopped onion, two finely chopped tomatoes, a teaspoon of masala and add a little salt to onion and tomatoes  to make them tasty. In Kokan, in dish of Boiled mung beans finely spun wet coconut is added to double the taste of the dish, so add half a bowl of finely spun wet coconut in it and also add a little finely chopped cilantro on it and mix all these ingredients well.
8) This dish becomes slightly sweeter because of wet coconut, slightly spicy because of spice and slightly sour because of tomatoes. In this way, in a very short period of time, dish like this with mixed tastes nutritious and hot boiled mung beans will be ready to eat.
