Ingredients :

1) Oil
2) Seven To Eight Bitter Gourd
3) Turmeric
4) Spice
5) Salt

Procedure :

1) To make Talaleli Kurkurit Aani Masaledar Karali or Fried Crispy And Spicy Bitter Gourd Slices, first wash seven to eight bitter gourd vegetable with water, so that the soil on the skin of the bitter gourd will wash away. Then cut the bitter gourd vegetable into two vertical pieces with the help of a knife or a cutter. Bitter Gourd vegetable contain small white seeds, remove all seeds with a spoon or peeler. After the bitter gourd vegetables are properly cleaned in this manner, cut the bitter gourd vegetables into thin vertical slices in a large plate with the help of a knife or a cutter.
2) Then take a big vessel, take enough water to sink all the slices. Soak all these slices of bitter gourd in water in the vessel for 8 to 10 minutes so that the slices of bitter gourd will be harden in water and will become more crunchy when fried.
3) After 10 minutes, remove the water from the soaked bitter gourd slices, then add a pinch of turmeric powder, a teaspoon of spice for spiciness and salt to taste. Then mix all these bitter gourd slices by hand so that all the ingredients will be right everywhere. 
4) Then turn on the gas and place a large cauldron over it and pour approximately oil into the cauldron to fry the turmeric, spice and salt mixed slices of bitter gourd. Heat the oil over a medium flame, after oil is well heated, keep the gas over a low flame and fry all these bitter gourd slices in oil till they become reddish. Do not fry the bitter gourd slices on high flame because there is a possibility of scorching the slices, so fry the bitter gourd slices on low flame.
5) Once the bitter gourd slices turn red, the bitter gourd slices will waft a pleasant aroma. After frying all the bitter gourd slices properly in oil, strain the oil neatly and carefully remove all the slices in a tray or a plate with the help of a jhara (spoon) and then turn off the gas.
6) In this way, just in 20 to 25 minutes, delicious, hot, spicy and fried crispy bitter gourd slices will be ready to eat along with rice and dal or with chapati or bhakari.
