We all know that some people like to eat vegetable made from potato by adding green chillies while most people like to eat spicy vegetable made from potato by adding spice. However, there are different methods of making potato vegetable in Kokan region. One of the well-known method is the yellow vegetable made from boiled potatoes which is required for making batata vada, the second method is spicy vegetable made from sliced potatoes and the third method is yellow vegetable which made from potato pieces which is cooked on steam and so on. Moreover, most people make their favorite potato vegetable according to their liking. Another method of making potato vegetable in Kokan is Ukadlelya Batatyanchi Masaledar Bhaji (Spicy Vegetable Made From Boiled Potatoes). In making this vegetable, spices are used instead of green chillies for spicy taste, so the vegetable gets a spicy taste and the vegetable becomes more palatable. In the Konkan region, small sized potatoes are used to make a spicy vegetable made from boiled potatoes because potatoes, which are small in size, boil quickly in water, and all the ingredients like bursting, spices, salt are mixed right everywhere to the boiled potatoes. Ukadlelya Batatyanchi Masaledar Bhaji or Spicy Vegetable Made From Boiled Potatoes is a very popular dish in Kokan and can be tasted with hot bhakari or chapati.

The main speciality of the dish of Ukadlelya Batatyanchi Masaledar Bhaji or Spicy Vegetable Made From Boiled Potatoes is that the small size potatoes are first boiled in water to make this vegetable and the use of boiled potatoes enhances the taste of the vegetable and makes it more palatable. Once the potatoes are boiled, the task of making spicy vegetable made from boiled potatoes becomes much easier. Another speciality of this vegetable is that small sized potatoes are used to make this vegetable than the larger potatoes that are always used which tastes great. The spice used in the vegetables enhances the flavor of the vegetables and for those who especially like to eat spicy vegetables, spicy vegetable made from boiled potatoes and bhakari made from rice flour can be great plan of meal.    

Ingredients :

1) Oil
2) Mustard Seeds
3) Cumin Seeds
4) Eight To Ten Curry Leaves
5) A Finely Chopped Onion
6) Turmeric
7) Spice
8) Salt
9) Ten To Twelve Small Size Potatoes
10) Water
11) Cilantro

Procedure :

1) To make Ukadlelya Batatyanchi Masaledar Bhaji or Spicy Vegetable Made From Boiled Potatoes first, wash ten to twelve potatoes with water, so that the soil on the skin of the potatoes will wash away. Then turn on the gas and place a large vessel on it. Add enough water to easily sink ten to twelve potatoes in vessel. Then add these ten to twelve washed potatoes in this vessel. Let all these potatoes for boiling up to 15 minutes on high flame. After 15 minutes, jab a fork spoon vertically in the potato to make sure that the potatoes are cooked well or not. If the spoon goes inside the potatoes, we can make assured that the potatoes are cooked properly. Then turn off the gas and carefully remove the hot water from the vessel. When the potatoes have cooled then peel the skin of potatoes. Because the skin of the cooled potatoes peels off quickly, so that the task of peeling of the potatoes will be quicker.
2) Once the potatoes are boiled, the task of making spicy vegetable made from boiled potatoes becomes much easier.
3) Then turn on the flame of a gas and put a big pan over it. When the pan is well heated, add ten to twelve teaspoons of oil, then over low flame, add half a teaspoon of mustard seeds. After frying mustard seeds properly in oil, the scent of mustard seeds will waft. Then add half a teaspoon of cumin seeds and eight to ten curry leaves. Add one finely chopped onion immediately after frying mustard seeds, cumin seeds and curry leaves.
4) Fry all the bursting properly. Fry the onion properly in oil till it turns red. Cut the boiled and peeled potatoes into two equal pieces until the onion turns red. 
5) Once onion turns red in oil, add a pinch of turmeric powder and one teaspoon of spice. (Note : For those who like to eat more hot and spicy foods, to make vegetable more spicy they can add more spice in the vegetable as per your liking. ) Immediately after this, add the boiled potatoes cut into two halves.
6) After that add salt to taste and fry all the vegetable properly so that all the bursting, spice will be right everywhere to the potatoes. Next, over a low flame, cover the pan and cook the potato vegetable for 10 to 15 minutes, as it does not take long to cook the potato vegetable over steam. If you cook sliced potato vegetable over a medium or a high flame, then the vegetable will get scorched. To not get scorched, keep the vegetable on low flame for cooking.
7) Because of boiled potatoes do not add any water to the vegetables for cooking. This vegetable cooks quickly on steam and due to this all the ingredients in bursing and salt are mixed right everywhere to the potato vegetable properly. After ten to fifteen minutes, carefully open the lid of the pan and now you can see that the vegetable will waft a pleasant aroma. When the potatoes are cooked through, turn off the gas and then add some finely chopped cilantro over the vegetable.
8) In this way, just in ten to fifteen minutes, hot, spicy and delicious dish of Ukadlelya Batatyanchi Masaledar Bhaji or Spicy Vegetable Made From Boiled Potatoes will be ready to eaten with hot bhakari or chapati.
