Mulyachi Bhaji (Bhaji Made From Radish Plant Leaves) is a very nutritious food. Radish is a green leafy vegetable. We all know that eating green leafy vegetables provides vitamins that are essential for the growth of the body, because green leafy vegetables contain some important nutrients. Radish leafy vegetables are rich in antioxidants and minerals like calcium and potassium, while radish leafy vegetables contain some vitamins A and C. The combination of all these nutrients in radish leaves helps to reduce high blood pressure and reduce the risk of heart attack. Radish leafy vegetables are a good source of natural nitrates which help in improving blood flow. Radish leafy vegetables are used to make Mulyachi Bhaji, Salads, etc., but in the Konkan region, Radish leafy vegetables are especially famous for being eaten with hot roti made from rice flour.

Radish is a crop grown especially in cold climates, i.e. winter crops, and is grown during the Rabi season, but due to the development of varieties that can grow well in hot climates, this crop can be grown year round. In Konkan, Mulyachi Bhaji is made with hot roti made from rice flour, Mulyachi Bhaji is very tasty with roti made from rice and Nachani flour. Radish is a leafy vegetable that is available for twelve months, so housewives can make a enjoyable treat of Mulyachi Bhaji with roti for breakfast or lunch and dinner. There are many benefits of Mulyachi Bhaji and this is the main feature of this vegetable, so eating Mulyachi Bhaji boosts the body's immune system and the inclusion of Mulyachi Bhaji in the diet of diabetics is a great remedy for this disease.  

Ingredients :

1) Oil
2) Seven To Eight Curry Leaves
3) Two Finely Chopped Onions
4) Four To Five Green Chillies Divided Into Two To Three Parts
5) Mula Vegetable (2 Batches)
6) Water
7) Salt
8) One Bowl Of Finely Spun Wet Coconut

Procedure :

1) To make Mulyachi Bhaji, first take 2 Batches of Mula Vegetable. Then, in a large pot or in a platter, remove the leaves from Mula vegetable and also separate the white radish from the vegetable.
2) Rinse the green leaves and white radish of Mula Bhaji in water so that the soil in it is removed.
3) Then finely chop the green leaves of this Mula Bhaji along with the stalks with a help of a cutter or a knife and white radish is also very nutritious, so cut it into four vertical sections and then cut them horizontally.
4) Once the Mula Bhaji is finely chopped in this manner, place the chopped green leaves of the Mula Bhaji and the finely chopped white radish in a separate plate for the first time. Then add a little salt to taste to the chopped vegetable and finely chopped radish and crush it with salt, so that the salt is well mixed in it and water is released slowly. (Chopped green leaves of the Mula Bhaji and finely chopped radish are never washed with water like fenugreek, spinach, red leafy vegetable but they are crushed with salt, the main reason for this is that due to the high fiber content in this vegetable, if salt is added to this vegetable during cooking, it does not mix to the vegetable properly and as a result the vegetable becomes saltless. So always add a little salt and crush the Mula Vegetable. ) Then remove the water from this vegetable.
5) Then turn on the flame of a gas and place a large pan over it. Add five to six teaspoons of oil to the pan. Once the oil is well heated, add four to five green chillies, divided into two to three parts, and seven to eight curry leaves. Slightly reduce the flame so that the green chillies and curry leaves do not get scorched in oil. After frying the chillies and smelling of curry leaves, add two finely chopped onions.  Fry all the bursting properly. Fry the onion properly in oil till it turns red. 
6) Once the onion turns red in oil, add the crushed salt and water drained vegetable of Mula. When adding vegetable, take special care that there is no water in it, as the vegetable are cooked properly on steam. After that, do not add too much salt in the vegetable because in the beginning you used salt when crushing vegetable. So add a little salt to taste to the vegetable and mix the vegetable well so that the salt is just right everywhere in the vegetable.
7) Then keep the gas on low flame and cover the pan with a lid and cook for 10 to 15 minutes. When Mula Vegetable is cooking, it will automatically release water and it will cook very well on steam, so do not add any water to cook it. While cooking the Mula vegetable, it will also make a squeaking sound, from which you will notice that the Mula vegetable is still being cooking.
8) We can increase the gas a little bit to make it quicker while making Mula vegetable, but it is more likely to be scorched. Because all housewives know that any vegetable on steam cooks very quickly. If the vegetable is cooked properly, the water in it will go away, so once the vegetable is cooked, it will not make a squeaking sound. If you want to make sure that the Mulyachi Bhaji is cooked properly, take a spoonful of white radish in the vegetable and squeeze it with your finger. If the radish is soft, it can be said that the vegetable is cooked perfectly.
9) Once the Mula Vegetable (Mulyachi Bhaji) is cooked, add one bowl of finely spun wet coconut, stir well and then turn off the gas. In this way tasty and nutritious Mulyachi Bhaji will be ready to be eaten with hot roti.
