Ingredients :

1) Oil
2) Mustard Seeds
3) Seven To Eight Curry leaves
4) Cumin seeds
5) Four To Five Finely Chopped Garlic Cloves
6) Finely Chopped Half Piece Of Ginger
7) A Finely Chopped Onion
8) Two Finely Chopped Tomatoes
9) Two Potatoes
10) Turmeric
11) Spice
12) Hot Spice
13) Salt
14) A Big Cauliflower Vegetable
15) Cilantro

Procedure :

1) To make Flower Batatyachi Masaledar Bhaji or Spicy Vegetable Made From Cauliflower And Potato Vegetable, first wash a large cauliflower and two potatoes with water, so that the soil on the skin of the cauliflower and potatoes will wash away. Then remove the leaves of the cauliflower vegetable and remove the pieces of cauliflower vegetable in a large plate and while removing check whether there are worms inside the vegetable or not and then chop the pieces of cauliflower in a plate with the help of knife or a cutter. Then peel the skin of potatoes and cut the potatoes into thin sized slices with the help of a knife. Soak all the finely chopped cauliflower and thin slices of potato in a large pot with water. so that the cauliflower vegetable does not get stuck in the air and will remain fresh in water and will not make the potato slices reddish in color and also remove the excess starch from the potato slices.
2) Once we done with making finely chopped cauliflower and making thin sized slices of potato, it becomes very easy to make Flower Batatyachi Masaledar bhaji or Vegetable made from Cauliflower and Potato vegetables.
3) Then turn on the flame of a gas and put a big vessel over it. When the vessel is well heated, add ten to twelve teaspoons of oil, then over low flame, add half a teaspoon of mustard seeds. After frying mustard seeds properly in oil, the scent of mustard seeds will waft. Then add seven to eight curry leaves. Add four to five finely chopped garlic cloves and finely chopped half piece of ginger immediately after frying mustard seeds and curry leaves.
4) After frying all the bursting properly the aroma of garlic and ginger will waft and then add one finely chopped onion in it.
5) Fry all the bursting properly. Fry the onion properly in oil till it turns red. Remove the water from the finely chopped cauliflower and thin sized potato slices soaked in pot water on the other side until the onion turns red.
6) Once onion turns red in oil, add a pinch of turmeric powder, two teaspoons of spice and half a teaspoon of hot spice. (Note : For those who do not like to eat more hot and spicy foods, to make vegetable little spicy they can add spice less than two teaspoons and hot spice less than half teaspoon in the vegetable as per your liking.) Immediately after this, add the water removed finely chopped cauliflower and thin sized potato slices from the pot to this bursting. While adding finely chopped cauliflower and potato slices, take special care that there will be no water in it, as the spicy vegetable made from cauliflower and potato vegetable will cook well on steam, so do not add water in it for cooking cauliflower and potato vegetable.
7) After that add salt to taste and fry all the vegetable properly so that all the bursting, turmeric, spice and hot spice, salt will be right everywhere to the vegetable. Next, over medium flame, cover the vessel to cook cauliflower and potato vegetable. Then after three to four minutes, carefully open the lid of the vessel and now you can see vegetable looses water that means cauliflower and potato slices in vegetable are not cooked well, then fry the vegetable with the help of a spoon. Then add two finely chopped tomatoes in it and cover the vessel again to cook the vegetable over steam.
8) After this turn the gas over a low flame, as it does not take long to cook the cauliflower and potato slices over steam. If you cook cauliflower vegetable and potato slices over a medium or a high flame, then the vegetable will get scorched. To not get scorched, keep the vegetable on low flame for cooking. After five to six minutes, carefully open the lid of the vessel, the tomatoes in the vegetable will look soft after cooking and if some water has been released due to the addition of tomatoes in the vegetable, then mix the vegetables properly so that the tomatoes will mix well in the vegetables. Then cover the vessel again to cook the vegetable over steam for four to five minutes. After four to five minutes, if you open the lid, you will see that the cauliflower in the vegetable have become soft because the vegetables of cauliflower cook quickly on steam, then make sure that the potato slices are cooked or not by cutting the potato slices with the help of spoon. If the potato slices are easily cut, you can make sure that the vegetable is cooked properly. When the cauliflower and potato slices are cooked through, turn off the gas and then add some finely chopped cilantro over the vegetable.
9) In this way, just in ten to fifteen minutes, the delicious, spicy and excellent dish of Cauliflower and Potato vegetable will be ready to be eaten with hot bhakari or chapati.
